摘要:
We consider how a retailer manages the inventory of a perishable product. The product has a 2-period
lifetime and its quality deteriorates over time, so thatcustomers are willing to pay more for fresh
than aged products. The retailer canchoose to offer the aged products at a discount. She can also
modify the productdisplay strategy, for instance, by placing the aged products in front of shelves
inorder to promote the sales and reduce the waste. Consumers are either utility-maximizers, i.e.,
they consider all options and chose the product which maximizestheir utility or utility-satisfiers, i.e.,
they choose the product which is the easiest toreach and provides them with a positive utility.
For both the deterministic andstochastic demand cases, we characterize the optimal selling strategies
underdifferent product display strategies: a layered display with fresh or aged products inthe front
and a common display with both products offered in the same location.
We find that the common display is always preferred under deterministic demand whilethe layered display
setting can improve the retailer’s profit when demand isstochastic. Making the aged products more
accessible not only reduces the wastebut also increases the profit when the discount on the aged
products is low. Incontrast, making the fresh products more accessible mitigates cannibalization
andincreases the profit when the discount on the aged products is high.

Xiajun Amy Pan is an Assistant Professor in the Department of Information Systems and Operations Management.
She holds a PhD and an MS in Supply Chain and Operations Management from the University of Texas at Austin.
She received an MS in Industrial Engineering from the National University of Singapore, and a BS in Mechanical
Engineering from Xi'an Jiaotong University, China.
Amy’s research interests include Supply Chain Management, Retail Operations Management, Business Analytics,
Operations-Information Interface, and Operations-Marketing Interface. Amy has conducted consulting projects
for BNSF Railway Company and developed decision models and solution approaches, saving millions of dollars
yearly for the company. She has published papers in top journals such as Production and Operations Management,
and Manufacturing Service and Operations Management. She won the Wickham Skinner Award for Best Paper
Published in Production and Operations Managementduring 2012. Amy is serving as a secretary for Production
and Operations Management Society and junior VP for meetings for Women in OR/MS of INFORMS. She co-chaired
the Supply Chain Analytics Track for POMS 27th Annual Conference, 2016.
